日式蒸蛋羹,茶壶汤
我家那位终于得拔掉他最后那棵智齿, 这几天嘴里老是含了个糖, 说是不能吃辣的, 不能吃硬的, 我平时只会做粗菜的人, 也来为爱走精致一回吧, 跟他说过当年要是娶个上海姑娘多好.
本来只是想做个肉饼蛋羹给他吃, 看他可怜的样子, 就来点花样吧. 做个日式的, 把材料买来了, 可是每样东西会多很多出来, 就把同样材料再做个汤, 鸡肉还多出来, 就串烤几条, 菠菜本来是用来做点装饰的, 结果一大捆的, 又做了道凉拌菠菜….. 咳, 我做菜就是这样, 越做越多.
曾经也心动过跟大家学精致就买了好多日式的小盅小壶的, 一直没那个心境来用它们, 今天也给请出来了. 还缺个小茶壶, 临时去买了个.

准备工作:
鸡腿肉切小块用淡色酱油, 糖, 米酒, 白胡椒,一点太白粉, 腌一下,
虾去皮, 去肠, 留尾, 用盐抓过, 再冲洗, 擦干,
蛤蜊解冻,
鲜香菇去蒂, 割画个花,
鱼板切片,
姜去片, 切小片,

先做汤:
准备煮出汁 (懒人版的):
我用了3杯水, 2小勺的亨大师粉, 1大勺味啉酒, 2小勺淡酱油, 烧滚,
用一小部分鸡腿肉用开水烫过, 8分熟吧, 为保持汤清澈,
茶壶里摆上鸡肉, 虾, 鱼饼, 香菇, 1小片姜, 蛤蜊, 加入烧热的煮出汁, 盖好壶盖,上蒸锅, 大约4-5分钟就可一了,
摆点小萝卜婴菜, 挤点柠檬汁, 喝汤,吃菜.

蒸蛋羹
4个鸡蛋打散, 对入冷的煮出汁, 跟汤一样的料和量, 只是不用加热, 同样地把小盅子里摆上生的鸡肉, 虾, 鱼饼, 香菇, 1小片姜, 蛤蜊, 再过筛(去沫)倒入蛋液, 不要太满, 8分满, 食材略露出来, 也要盖上盖子, 进蒸锅, 大约13-15分钟, 就关火.
取出, 也放点小萝卜婴菜的菜, 几丝柠檬皮, 好鲜, 好滑嫩. 剩的进冰箱, 冷吃也很棒.

菠菜烫熟, 冲冷水, 挤干, 切段, 淋上酱汁, 撒上紫酥芝麻香料,和紫菜丝, 酱汁是用柠檬汁, 酱油, 麻油, 一点点糖拌匀.

鸡肉串, 同样腌好的鸡腿肉, 串好, 在有烤架的炉盘上烤, 翻翻动, 刷点照烧酱, 撒点芝麻.
