Cornbread Breadfast Casserole
To make cornbread:
2 cup self-rising cornmeal mix
1 1/2 cups nuttermilk
1 egg,slightly beaten
1/4 cup oil
1 pound bulk sausage, hot or mild
5 eggs
1 1/2 cups milk
2 cup shredded cheddar cheese
Brown and scramble sausage, using shallow/skillet lid or 10" skillet. Remove sausage and drain on paper towels. Preheat oven to 350F, Grease bottem of combo cooker or 10" deep skillet and place in oven to warm. Mix first four ingredients together in bowl and set aside. In another bowl, beat 5 eggs and milk and set aside. Remove deep skillet from oven and pour cornbread mixture into hot skillet and add sausage. Pour egg and milk mixture over saugage. Top with cheese. Bake for 45 minutes in middle of oven.
