“笃”为沪语方言,意为:煮、炖,所以也可称之为,腌[肉]炖鲜[肉]
其主要原料有;咸肉、鲜肉;

竹笋、百页结……;

先将五花肉与咸肉过水定型再切成方型,汤锅入姜与肉同煮至汤白再最后加入百页结、竹笋段,喜欢的话最后加入点青菜,汤浓味醇,乃汤菜一绝之一。
