土豆拨烂子是我家最常做的土豆主食吃法，通常是蒸一大盆，放冰箱里冷藏，随时拿出炒上一部分，就是很美味的主食了，通常还会就上一瓣大蒜，蒜的辛辣把土豆拨烂子的味道又提升了一截。家常的美味总是吃不腻的！

 

土豆擦成这种比较扁、粗的丝，过水清洗一下，这样蒸出的拨烂子更白，更筋道

 

把沥干水的土豆丝里少量、多次地加入面粉，翻拌均匀，薄薄地裹上一层，上锅大火蒸5-6分钟，土豆变色就熟了。蒸的时间太长，土豆丝会黏在一起，多做几次就有经验了。

 

 

蒸熟后，趁热用筷子挑散，然后，葱、蒜、辣椒炝锅，炒拨烂子，也要炒个几分钟，至微微上色，加盐调味，口感最佳。

 

 

出锅啦！就上一瓣生蒜，经典的吃法，过瘾的美味！哈哈
