西餐文化系列三  摆台(Table Setting)规则   李仪编译

摆台,出自法语词Couvert,是指餐桌上用来进餐的所有物品(具体来讲就是指餐具、杯,餐巾、餐盘,其他辅助餐具也可算在内)在台面上的摆设。摆出一桌造型美观的台面,不仅为客人提供一个舒适的就餐场地和一套整洁的就餐用具,而且可为其带来赏心悦目的艺术享受。这当然也是美食不可缺少的一部分。

西餐的餐具基本上使用金属餐具,以刀、叉和匙三类为主。因食用的时间不同及菜肴种类不同,食用方式各异,使用的餐具在形状大小上也有区别。我们来看看一日三餐的摆台规则:

早餐摆台:

 当晚宴中有鱼和海鲜时,摆台应另放鱼叉鱼刀:

(above the plate. left to right): salt & pepper, dessert fork & spoon, water/wine glasses.
(plate row. left to right): fish fork, dinner fork, salad fork, napkin, rim soup plate, plate, salad knife, dinner knife, fish knife, soup spoon.

这些规则和知识无论在餐馆还是在家里都是通用的。在必要的时候可以做些灵活变通。

最基本的规则是根据菜的道次从外到里放置相应的刀叉勺,除甜点勺叉放在上面
