凉粉,烤红糟鸡串,烤马交鱼

前一天做了凉粉和烤肉,吃得一点没剩,一面很高兴他们爱吃,另一面有点觉得他们没吃够,就再补一顿吧.

又做了凉粉,这次用了,1:7 的粉对水的比例,好象更好,更滑.

酱也改了一点,没用芝麻酱: 酱油,红油,蒜泥,糖,醋,味精,麻油,盐,花椒油,花椒面,熟芝麻,葱. 这个酱卖相好一点,但不如前一天的好吃. 因为没吃完.

红糟鸡串--用了 ROLL 的,"香煎红糟鸡"的腌料,蒜,美极酱油,料酒,蜜糖,红糟,味精,盐,腌了一天,我用了去皮去骨的鸡腿肉.我是用铁板烧来煎的,煎之前喷上橄榄油,火不能大.容易烧焦.

味很好吃,肉很嫩,又吃得没剩.

马交鱼用,sake酒和盐淹俩个小时,擦干,喷油,干煎,很好吃.

小嫩辣椒,不辣的,喷油,撒上蒜盐,干煎. 真不错.

怕他们等不急,做了一个日本蛋卷先打个底.

6个蛋,5大勺水,1小勺dashi粉,1/2小勺盐,1大勺糖,用专门的锅煎,边煎边卷.

去了 Pasadena Old Town. Norton Museum, very nice collections,go on line to check it out. Someone asked me about Huntington Library, it's in southern California, they are building a big Chinese Garden,check it on line if you are interested.
