茴香牛肉包子, 米粉蒸排骨, 酸菜炒肉丝, 耗油牛肉炒磨菇, 糖醋凉拌小箩卜

茴香牛肉包子—

皮是用面包机发的面:

材料:

1 ½ 杯水
1 汤勺橄榄油
3 ½ 杯高筋面粉
2 汤勺糖,
2 茶勺发泡粉(baking powder)
2 茶勺孝母粉 (active dry yeast)

按顺序把材料放面包机, 按 dough setting, 铃响了取出来, 揉成一条后, 分16段, 每段杆成一饼,包馅, 醒15分钟,上开水的蒸锅, 大火20分钟后关火, 停3-5分钟,开盖吃.

馅:

牛肉(1LB多一点), 茴香(一大把), 盐, 糖, 味精, 麻油, 一点五香粉, ½杯鸡汤,1个 蛋, 一汤勺太白粉,胡椒,花椒粉.
先把肉和鸡汤,蛋一起打成泥浆,加调料,再搅, 加切碎的茴香拌匀, 在盆里画分4等份, 每一等份包4个包子.

包得不好看, 好吃,还有汤呢.

晚饭-

米粉蒸排骨—给"万水千山也有情"MM 的排骨谗的, 也做了. 以前上过,不说啦.

酸菜炒肉丝—里脊肉切丝,用生抽, 淀粉,酒, 味精马味, 下油锅炒断生,取出.
油锅炒香蒜末,辣椒末, 姜米, 下笋丝, 炒几下,加酸菜炒,加一点糖,味精, 胡椒,麻油.

这道菜可以用来下面条,配稀饭,很好.

耗油牛肉炒磨菇—以前做过,这次加了磨菇, 有点出水,卖相不好,牛肉好嫩,好吃.

糖醋凉拌小箩卜—糖,醋(1:1), 一点盐, 腌过.
