【南方版的饺子】

饺子馅:肉末,虾仁,几片黄芽菜叶,韭菜一把(韭菜根切掉不要),蚝油,鲜酱油,盐,麻油,鸡蛋一个

饺子皮:南方版的饺子不擀皮,用现成的饺子皮。面食大师看了恐怕要晕过去。木有办法,不会擀皮可还是隔段时间就馋饺子。

洗净的黄芽菜平铺在盘子上入微波炉里转三四分钟

稍置凉后切碎

韭菜叶洗净切碎,倒些麻油拌匀

肉末虾仁加鸡蛋,鲜酱油,蚝油搅拌

再加韭菜,黄芽菜,盐一同搅拌。咸淡可取一小勺馅放小碗中在微波炉里转十几秒尝尝。

饺子皮开封,再准备一碗温水。中国超市里的这种真味牌的上海饺子皮还不错,不易破。

皮子分分散

将皮子在温水里转一圈,尽量让每张皮子边都沾到水。

然后放置一二分钟。这样处理过的皮子边缘就变的柔软并带粘性,包起饺子来不会散开。
