感恩节也是吃火鳮的节日,但家中大小一向对火鳮都不大感冒,所以今年的感恩节改为围爐打火锅,一班亲朋席分两桌,借这节日大家一起热热鬧鬧的相聚与庆祝一番,因为太多人在趕着吃很多菜来不及拍照还请大家见谅.
白汤底:猪骨先出水,尤鱼干泡温水,瑶柱泡温水弄成丝,萝卜切大块.热一锅滚水,放猪骨,尤鱼干, 瑶柱,萝卜,姜块,料酒再用文火炆煮四小时,再加调味料即成.
麻辣汤底:热油锅炒香八角,花椒,干辣椒,豆瓣酱煸出红油后再加入大蒜,姜块再炒出香味,再注入猪骨浓汤,等烧开后加入些少淮山,构杞,党参,麻辣火锅料,冰糖,精盐,味精,料酒再转小火炆煮两个半小时即成.
火锅醮料 :沙嗲酱,生抽,辣椒,蛋,糖,浓汤.
主料:牛肉片,羊肉片,金钱展,发水尤鱼,鲜鱼片,鲜蚬,虾,螃蟹,猪腰,牛百叶,猪皮,炸鱼蛋,鱼饺,豆腐,萵苣,油菜心,蚝菇,王子菇,莲藕,海带,蛋面.
