Easter Brunch: 复活节的早餐
Easter Sunday morning was a lazy morning. Got up pretty late. No sense to make too complicated breakfast. Looked thru in the refrigerator and found basic stable in the house which is milk, eggs and bacon. Let's have blueberry smoothie, mini quiche Lorraine and homemade Rye bread with homemade peach jam. Simple and healthy.
上周复活节星期天的早上是个懒散的早上,起得很晚,不想再跑出去吃早餐,也没必要做复杂的早餐。打开冰箱巡视了一圈,家里有基本的原料,牛奶,鸡蛋和咸肉。还有我自己做的黑麦面包,就用它们来做一顿简单又健康的早餐吧。
早餐食谱:蓝莓冰莎,小小早餐蛋挞,黑麦面包配自己家做的桃子果酱。
1) Blueberry smoothie: 蓝莓冰莎
2 cup frozen blueberry add 1 cup homemade grape juice. Break down in a blender. It is smooth and refreshing.
2杯冰冻的蓝莓加1杯自己家做的葡萄汁。在搅拌机中打碎并搅拌均匀。自己家做的蓝莓冰莎清凉又爽口。早餐代替果汁非常棒。
2) Mini Quiche Lorraine. 小小早餐蛋挞
Pie dough:
3/4 cup flour
1/4 cup shortening
Pinch of salt
3 Tbsp cold water
Quiche Lorraine filling:
3 eggs
2 pieces of bacon (cooked and break into small pieces)
1/3 cup sharp chaddar cheese (shredded)
2 Tbsp milk
Pinch of salt and pepper
A: roll the dough into 1/4 inch thick
B: Fit the dough in a small container
C: Use a fork to poke few holes
D: Beat 3 eggs mix with 2 Tbsp milk, add cheese and bacon pieces. Add pinch of salt and fresh grounded peppers
E: Fill the container with the egg mixture. Bake in a preheated oven at 375F for ~20 minutes.
蛋挞皮
3/4杯面粉
1/4杯白油
一点盐
3大勺冷水
早餐蛋挞液
3只蛋
2条煎好的咸肉切成小块
1/3杯切成丝的起丝
2 大勺牛奶
一点盐和黑胡椒
A:蛋挞皮擀成1/4厚
B: 把蛋挞皮放如容器中
C: 蛋挞皮上用叉子扎几个孔
D: 3只鸡蛋加2 大勺牛奶混合均匀,加入起丝,切成小块的咸肉,盐和胡椒粉,再混合均匀。
E: 将蛋液混合物倒入容器中,放入预热好的烤箱中375度,烤~20分钟。
Assemble the breakfast: 早餐组合在一起
Sliced few homemade Rye bread and toasted in a toaster. Serve them with homemade peach jam. Couple drop of tobasco sauce onto the Quiche gave it a little kick. Glass of blueberry smoothie is rich in Vitamins. This simple breakfast provided whole grain, right amount of protein and full of Vitamins. It's great start for a day.
切几片自己家做的黑麦面包,放在toaster里烤一下,抹上奶油和自己做的桃子果酱,摆在盘子中,烤好的小早餐蛋挞加上两滴美国辣酱,给早餐加了一点跳跃,一杯蓝莓冰莎含有丰富的维他命,清凉又爽口,整个早餐提供了全麦营养,足够的蛋白质和丰富的维生素。是一天的好开始。
Easter Dinner:复活节晚餐
This year Easter dinner is also quiet simple. All I used is my best friend, the oven.
今年的复活节晚餐也非常简单。所有的餐都是我的好朋友“烤箱”帮我做的。
Main course:
Baked ham with honey glaze
Side dish:
1)Oven roasted homegrown butternut squash
2)Sweet corn salad
3)Homemade butter dinner rolls
Dessert:
Blueberry upside down cake
主餐:
蜜汁烤火腿
配餐
1)烤自产的奶油瓜
2)甜玉米色拉
3)自己做的奶油晚餐面包
甜点:
蓝莓翻转蛋糕
Main course: Baked ham with honey glaze
Brush a ham with mixture of soy sauce, honey and red wine vinegar (4:2:1). Bake it in a 350F oven for ~2hrs. Brush with the sauce every 30 minutes during the cooking.
主餐:蜜汁烤火腿
整只火腿用锋利的刀切成十字,刷上酱油,蜂蜜,和红酒醋的混合物,混合比例为4:2:1。在350度的烤箱中烤2小时。每隔30分钟刷一次酱油混合液。
Side dish1:Oven roasted homegrown butternut squash
Do you remember the butternut squash from our garden? We still have some from last year harvest. They are kept well and delicious.
配餐1:烤自产的奶油瓜
还记得我家菜园种的奶油瓜吗?它们保存期很长。味道一流。
Cut the butternut squash into strips and roast them in the same pan with ham. The juice from the ham give the butternut meaty flavor. Simple and delicious.
奶油瓜去籽,切条,放入烤火腿的同一个烤盘中烤。火腿流出的汁给奶油瓜带来肉香的味道,简单又美味。
Side dish 2:Sweet corn salad
I canned our Sweet corns from our garden last year. We have been enjoying them all year long.
1 quartz canned sweet corns
1/4 cup chopped green onion
1 Tbsp olive oil
1 Tbsp red wine vinegar
Mix all together, pinch of salt and pepper to taste. You can't get more simple than this.
配餐 2:甜玉米色拉
自家菜园种的甜玉米,去年我做了很多罐头,直到现在还有好多。
1 只大的甜玉米罐头
1/4杯青葱丁
1大勺橄榄油
1大勺红酒醋
将所有材料混合均匀,加盐和胡椒粉调味,还有比这再简单的菜吗?

The whole dinner was cooked in the oven. It is very simple and delicious.
整个晚餐都是在烤箱中做的,很少油烟,简单又美味。
Dessert: Blueberry upside down cake
Easter also means Spring is here. We like some fruity desert this time. Then, I had an idea to try a blueberry upside down cake. I made up the recipe by myself. It turned out perfect. We love it so much.
Recipe:
1 cup frozen blueberry (fresh berry is fine)
2 Tbsp brown sugar
1 cup flour
2 tsp baking powder
1/2 cup butter
1/2 cup sugar
3 eggs seperated
3 Tbsp milk
1 tsp vanilla
The procedures are quiet simple. See picture below.
A: Mix dry ingredients together. Cream butter, sugar and vanilla. Add egg yolks, one at a time. Add flour mixtures along with milk.
B: Use another bowl to beat the egg whites until it forms stiff peak. Mix egg white to the batter carefully.
C: Butter a cake pan and line a parchment paper at the bottom. Sprinkle brown sugar.
D: Sprinkle blueberry on the bottom of the cake pan
E: Pour cake batter on top of the berries. Bake in a preheated oven at 350F for ~20 minutes or until a toothpick came out clean.
甜点:蓝莓翻转蛋糕
复活节也有春天来临的意义。甜点最好也带一点水果的气息,我想出来个主意,试试蓝莓翻转蛋糕。配方是我自己“捏造”出来的,蛋糕烤好非常好,我们真是好喜欢。
配方如下:
1 杯冰冻蓝莓(新鲜的也好)
2大勺红糖
1杯面粉
2小勺发粉
半杯奶油
半杯白糖
3只鸡蛋(蛋黄和蛋白分开)
3大勺牛奶
1小勺香草香精
做法看下图:
A: 取一只小盆将面粉和发粉混合均匀。混合器中打发奶油,糖和香草香精。一只一只地加蛋黄,再加入面粉混合物和牛奶。
B: 另取一只盆打发蛋白。把蛋白小心混合入蛋糕面糊中。
C: 蛋糕烤盘抹上奶油,放好烤盘纸。撒上红糖。
D: 撒上蓝莓
E: 最后倒入蛋糕面糊。放入350度的烤箱烤20分钟左右,或者直到牙签插入出来没有面糊。

这是蓝莓翻转蛋糕的成品。有人已经等不及了,还没等我拍照,蛋糕已经少了几块。。。
This blueberry upside down cake is so creamy and fluffy. The blueberries brought a touch of the Spring. A nice part of is that it is not hard to make at all. You might like to try it one of these days...
