法式乡村鱼汤, 面包晚餐

那天看武生先生的法国棍子面包的贴, 就心动了, 又有信心来做好吃的面包. LG一直爱吃这种外壳硬脆, 内部柔软有劲, 很lean (vs. rich) 的面包, 做过很多次了, 总还是不十分满意, 马上就试了一下, 还是用了我用过的配方, 但采纳了他的一些窍门.

觉得是有进步了, 只是还希望看到内部的气泡更大,


法式乡村面包

引子(poolish):

½ c 水,
1 c bread flour
1/16 tsp yeast

面包:

All of the poolish
1 tsp yeast
3 ½ c bread flour
1 ¼ c water
1 tsp salt


前一天做哪个引子, 第二天用引子来加在面里, 我是用面包机来做的, 等面团两次发酵后,从面包机取出, 排气, 成团, 放入醒面和成型的木碗里(proofing basket), 等发到两倍以上, 反扣在垫了烤纸的pizza peel 上, 洒干粉, 用快刀画开, 放在预热 450F的pizza stone 上, 烤架放最低层, 喜欢黑的可放上层, 烤箱底放一盘, 倒入一杯开水, 烤50分钟, 面包内部温度到210F取出, 放架上冷却.

一心扑在做面包上, 临时把家里有的材料做了一个简版的法式鱼汤, 一家人吃得很开心,


鱼汤

用橄榄油, 炒香洋葱和胡萝卜碎, 加香叶, 欧芹, 百里香, 蒜末, 柠檬皮, 炒香, 加去皮切碎的番茄, 鸡汤, 烧滚, 加鱼块和虾, 加盐和胡椒, 中火烧开. 撒欧芹碎.
