昨天去市场买菜,见柠檬好新鲜和便宜,便买了一包回来,做我喜欢的Lemon Meringue Pie。先去网上找到个方子,见有近300 人review,评了4 个半星,应该不错。立马动手,原材料简单,家里有现成的,过程也不复杂,一个多钟头就大功告成了。先在室温下放了一个多小时,然后放到冰箱里3个小时后,再盖上薄膜纸放到冰箱里过夜。第二天一早,迫不及待的从冰箱里端出来,除了Pie的高度降低了以外,其余的看起来是perfect,切下一块装盘试试味道如何,酸甜细腻,带着柠檬的清香,又一个perfect !!! (自己给自己给力哈!)女儿说好吃,LD吃了以后没有批评,我认为,没有批评那就是表扬。

Grandma's Lemon Meringue Pie

Ingredients
1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
3. To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
4. Bake in preheated oven for 10 minutes, or until meringue is golden brown.
我做的改动:
1. 我用的是10英寸的烤盘,想要饼厚一些,我多加了一个鸡蛋。
2. 匆忙中忘记放Butter了,没觉得有什么不好的,正好还不想放呢。既然对味道没有影响,以后就不放了。
3. 今天买的柠檬个子算中等,我拿了5个挤汁。我觉得酸味浓了一点,下次可以用3-4个就行了。
4. 做baked pastry shell,把pastry shell放进420F 烤箱里烤12分钟或成金黄色即可。
