看到私房上婪妈问:会包包子不?俺点头。会擀皮吗?再点。于是响应婪妈的号召学做蟹肉汤包。婪妈的方子在这里:http://bbs.wenxuecity.com/crab/1035844.html

正好上周末朋友去Torque 度假送来一个活的大螃蟹,没吃完,把蟹肉剔下来冻着呢。星期天早上起来包汤包。因为没吃过正宗的蟹黄汤包,就只能按方子推想了。另外,我把原料的用量记了一下作为参考。

原料

  • Plain flour 2 350g),温水(一半开水,一半室温水)3/4cup+2大匙

  • 猪肉馅250g,蟹肉150g,小葱一把,生抽、盐、鱼露、糖、蒸鱼豉油各适量

  • 备好的猪皮1杯半,水3杯,盐1/4tsb,
    胡椒粉1/4tsb2片姜。

做法:


  • 以前买猪腿肉时,肉皮下下来,去肥肉、油脂洗净,下入开水锅中煮5分钟,取出把残留的油脂再刮干净。肉皮切小条或丁,放入保鲜袋,冷冻保存。用时取出化冻,淘洗后按比例入电高压锅,加盐胡椒粉姜我的是从国内带来的,压30分钟。过筛倒入大盘,肉皮及调料弃之不用。另取一小碗,倒入一小袋gelatine powder,加少许凉水化开,倒入肉皮汤中搅拌均匀,加保鲜膜放阴凉处或冰箱内至凝固。这个过程最好提前一天做好。

  • 面粉用温水和成软面团,盖好醒半小时。

  • 猪肉馅加原料2中的各种调料,及少量水调好。可按个人口味调整味道。将肉皮冻用刀子划碎,倒入肉馅中拌匀。

  • 将醒好的面团搓条下成1535g左右重的剂子,每个擀成直径12cm左右的圆皮
    (不要太大太薄 一来包子口处面太厚,口感不好,二来皮太薄易破),包成15个包子(口要封死)。

  • 用裁好的greaseproof/parchment paper垫好包子,入蒸锅大火蒸20分钟。

  • 将蒸好的汤包小心地提起放入小碗中,用筷子开个小口,让汤流出,也散一下热气。鲜!

  • 再配一碗绿豆莲子粥。。。星期天的早饭。
