柠檬蛋糕 Lemon Cake

为了柠檬水,去Costco买了一袋柠檬。回家才意识到,这一袋柠檬实在是太多了。我为什么要去Costco?要不做个柠檬蛋糕吧,然后喝柠檬水帮着消化。把三个网上的recipes合成了一个。这次的比例很好。- 柠檬真的买多了。失败了两个还有居然还有半包剩下。- 成功的recipe如下:

 

1⁄2 lb unsalted butter, room temperature
1 2/3 cups granulated sugar
4 large eggs, room temperature
1⁄3 cup lemon, zest of, grated
3 cups flour
1⁄2 teaspoon baking powder
1⁄2 teaspoon baking soda
1 teaspoon kosher salt
1/4 cup fresh lemon juice, divided
3⁄4 cup milk
 
Preheat oven to 350°F 
Bake 45 minutes- 1 hour
 
1. Grease baking pan
2. Mix butter and  sugar until  it becomes light and fluffy, approximately 5 minutes.
3. With mixer on medium speed, add eggs, 1 at a time, and the lemon zest.
4. Add flour, baking powder, baking soda and salt
5. Combine 1/4 C lemon juice and milk in a bowl,add liquid mixtures to batter, beginning and ending with flour mixture.
6. Bake 45 minutes- 1 hour, until tester comes out clean.
