甜酒酿

甜酒酿

原料:

- 糯米3磅



- 上海酒曲球 1 个

- 普通面粉 1 小匙

- 冰糖桂花 1 小匙

做法:


1. 糯米放洁净容器内加水浸泡4小时。酒曲压碎碾成粉,与面粉混合,装小瓶,备用;

2. 泡好的糯米隔水大火蒸15分钟,然后用温水冲凉,沥水装盆,备用;

3. 取洁净瓷盆,铺上一层糯米饭,约1.5厘米厚,然后均匀地洒上酒曲粉;

4. 如上再铺一层糯米饭洒上酒曲粉后,加入冰糖桂花。然后再铺两层糯米饭和酒曲粉;

5. 最后抹平表面,在中心做个窝,窝内撒些酒曲粉。盖上盖子,保温36小时左右,必要时可用温水盆保持温热。

当窝里出酒就成了。
