夏日下午茶的选择 - 绿豆酥饼

   从小到大都特别喜欢吃酥皮点心。打从自己动手做以后,几乎每个月都会做上一次,当然每次做馅料会有所不一样。绿豆具有很好的清热解毒的功能,特别适合夏天吃,而现在正值夏日当时,以绿豆馅为馅料来做绿豆酥饼是再合适不过了,做出来的绿豆酥饼既有绿豆的清香,还有酥皮的香酥,相信吃货们是绝对不会拒绝这等美味的。正好家里还有上次做绿豆糕剩下的馅料还在冷冻室冻着呢,于是拿出来做了几个绿豆酥饼。周末的下午,吃着清香美味的绿豆酥饼,再配上一杯芒果椰汁露,轻松惬意的美好下午时光就这样开始了。

【材料】

油皮:低筋粉1 杯,猪油(或牛油)1/4杯,温水1/4杯,2小匙糖

油酥:低筋粉3/4 杯,猪油(或牛油)1/4杯,

馅料:绿豆馅(可以参考绿豆糕中绿豆沙的制作方法)

【操作方法】

1油酥部分:面粉放在碗中封上保鲜膜上笼蒸15分钟使面粉失去筋性,冷却后

                            加入冷的熟猪油,用手揉搓均匀成油酥面团,醒20分钟.

2油皮部分:将猪油,糖,水倒入面粉中,用手搓揉均匀成面团,置于操作台上

                           让其松弛30分钟左右,即成油皮面团;

3将油皮和油酥均匀地分成10等分;

4 把油酥包入油皮中成一小的面团;

5 将小圆面团压扁,用擀面杖擀成长条状;

6将长条卷起成圆柱状,接口朝上,再擀开成长条状;

7 再把长条卷起成小圆柱体,放置一旁醒20分钟左右;

8 取义小圆柱体,直接压平,擀成圆形即成油酥皮;

9 用有酥皮直接包入事先做好的绿豆馅,收口朝下捏紧、按扁;

10 在酥饼坯的表面刷上一层蛋液,然后用叉子在表面戳两排小洞以防止在烤的过程中爆馅;

11 放入预热到390F的烤箱中烤25分钟,热乎乎的绿豆酥饼就可以出炉了。









 芒果椰汁露

把两个芒果去核去皮削成果肉,放入食品料理机中,再加入一杯牛奶和半杯椰汁打成果浆就是好喝的芒果椰汁露了。





最后秀一下美味的早餐生煎包,
