说起避风塘炒的风味特色是香,焦,辣,脆,滋味与可口集成一碟的菜肴,今天我尝试加些X.O酱爆炒创意成一道下酒的好菜.避风塘有很多不冈的炒法与版本,而我唯独喜爱用肉碎与虾子加上一些不同的香辣配料的炒法,但今天炒的排骨己是肉,想想所以去了肉末,而X.O酱本身有了很多的虾米与江榣柱,所以也去了虾子,想来想去唯有回加些面包碎才能炒成避风塘的风味,加了X.O酱爆炒创意的避风塘排骨,香气撲鼻,闻而食指大动,排骨外香脆里嫩而有味,一盘真的是不够吃,请你们也试试吧.
材料:小排骨(Baby back Rib),X.O酱,法棍面包碎,蒜蓉,蔥丁,干葱,紅辣椒切片,盐,糖,胡椒,老抽,味精,紹酒,生粉.
做法:小排骨清洗乾淨滴干水斬件后,放盐,糖,胡椒,老抽,味精,紹酒与生粉醃两小时.燒滾油即走油至七分熟撈起.再起油锅,让油大滚后再回锅排骨炸成金黃色捞出沥干油备用.热油锅,爆香蒜蓉,放入蔥丁与X.O酱一起炒出香焦昧,下紅椒片,干红蔥,再放面包碎大火炒干水份,加盐,糖,胡椒,味精调味再回锅炸好的排骨炒片刻即可出菜.
