认识一退休了的茶楼老师傅,他在澳门做了几十年马拉糕,尝过他做的马拉糕才能真正懂得马拉糕的真缔.他告诉我传统的马拉糕要用老酵做,要发酵至少一天,通过闻其味观其色看是否发酵完成,最后还要加入一定比例的碱水.成功的马拉糕不但有蛋糕的蓬松,还要比蛋糕柔软湿润,入口没有蒸蛋糕那么干涩.若发酵足够,颜色呈褐色.好的马拉糕纹路有层次感,顶层和底部纹路走向都不同.
我试做过很多次马拉糕,用过很多很多方子,都不很成功,今天再战马拉糕 ,把师傅给的方子稍微做了改动,师傅用的是老酵,我没有,用了发酵粉,当然方法不能完全和师傅的一样.不过感觉还不错,已经和我吃过的师傅做的味道和口感慢慢接近了.

方子:
发酵粉少许,鸡蛋5个,面粉200G,吉士粉(蛋黄粉)50G,三花淡奶125G,白糖适量(看自己喜甜程度定),猪油半杯,香草精,碱水少许.
做法:
1 鸡蛋,面粉,吉士粉,淡奶,白糖,发酵粉搅拌成面糊,不用打发.
