Today's Feeding with love program we learned to make a health dish-Vegetable Submarine Sandwich.
Ingredients:
green and red peppers,seeded,chopped into pieces
red or Vidalia onion cut into small wedges
large sweet potato or yam peeled and diced
some olive oil
2 table spoon brown sugar
1 tea spoon dried basil or 1 table spoon chopped fresh basil
6 small whole grain submarine style buns toasted
2 table spoons light feta spinach or garden vegetable cream cheese per bun
Method
1.stir fry peppers,onion,and yam with oil and basil over medium high heat until yams are tender
2.sprinkle brown sugar on the top of food and stir fry for a bit longer
3.spread cream cheese over toasted submarine buns
4.spread stir fry vegetables over buns,garnish with fresh basil as desired
Note:you can use different vegetables depending on that you have,you can use chopped zucchini with the skin on,roasted eggplang,regular onions,red potatoes with the skin on or chopped pumpkin,instead of basil,try dried thyme and crushed rosemary together
The submarine sandwiches were ready to serve.Everyone got one to try.I must admit it was yummy.
